This is a Japanese style croquette—we call it “korokke”. It is deep fried crushed potato. We also have a cream sauce croquette with shrimp or crab. My favorite way to eat it is to buy it directly from deli and eat is on the street! It is super yummy! I made four servings this time, please half all the ingredients if you want to make it for 2. I always make extra and keep it freezer.

Ingredients
- 5 medium potatoes (1.7lb)
- 1/2 lb ground mixed beef and pork, or ground beef
- 1 onion (chopped)
- 2 cups Panko
- 1/4 cup flour
- 1 beaten egg
Spices
- 6 tsp tonkatsu sauce
- 2 tsp butter
- dash of salt and pepper
Preparation
- Boil potatoes until they are soft inside (20-30 minutes—check softness by inserting a chopstick through the potato), then remove the skin and mash
- Heat butter in frying pan then grill onion for 3 minutes, add ground meat, and cook for 2.5 minutes over medium heat, then sprinkle with salt and pepper
- Mix potato and meat, salt and pepper
- Make a potato balls with your hand
- Sprinkle flour on both sides of each ball then dredge in egg. Cover with Panko
- Heat oil to 375°F (190°C) and fry balls until golden brown (about 2 minutes on each side)
Remove the ball from the pan - Put tonkatsu sauce on the fried balls
Modifications
- If you don’t have tonkatsu sauce you can use oyster sauce, ketchup or BBQ sauce
