This is a simple and delicious Japanese desert. Japanese sweet potatoes are called “satsumaimo”. They are very sweet and soft. Satsuaimo are used frequently in Japanese cuisine, prepared in a variety of ways and dishes: in cakes, chocolates, chips, grilled, and steamed.

Ingredients
- 1 Sweet potato (satsumaimo)
- 2 Egg yolks (One for dough, one for glaze)
Spices
- 1/4 cup sugar
- 2 tbsp butter
- 2 tbsp milk
- 3 drops vanilla extract
- Dash salt
Preparation
- Peel the sweet potatoes, then slice into half-inch rounds
- Soak the sweet potatoes in a bowl of water to remove harshness (about 10 minutes). Change the water a couple of times to freshen up during this process
- Strain the sweet potatoes and boil them for 10 minutes (or until soft) in a pot
- Strain the hot water and put the sweet potatoes back in the pot, and mash
- Add sugar, butter, salt, and milk, and simmer on low
- Knead with a spatula until the mixture reduces
- Turn off heat, let the dough cool down, then add 1 egg yolk, and vanilla extract
- Mold the dough into oblong, egg-like shapes and place in foil cups (see picture)
- Spread 1 egg yolk over the sweet potatoes
- Bake 20-25min (until golden brown) at 400 degrees
